On Wednesday nights he steps out of the teacher's role to tell the story of his own flavor heritage, with a menu drawn from ancestral Mexican ingredients and contemporary technique. You can choose the dinner with or without wine and cocktails; when included, the wine is a selection of rare Mexican bottles rather than a formal pairing.
