A seasonal, two-day immersion into the ancestral worlds of nixtamal and cacao, held in the garden kitchen of Casa Jacaranda Cuernavaca and within a unique milpa in the Magical Town of Tepoztlán.

Rooted in curiosity and guided by tradition, this intimate retreat blends hands-on preparations, cultural storytelling, and deep culinary exploration. You will learn, cook, taste, and connect with the ingredients that shaped not only Mexico, but the entire Mesoamerican world.

I’m Chef Natalia Fitz, and I’m excited to host you on your Roots and Rituals Culinary Retreat!

I am the proud heir of two rich family culinary traditions—one from the heart of central Mexico and the other from the Pacific region of Sinaloa. These influences don’t compete; they blend seamlessly, creating a tapestry of cherished food memories where family comes together to prepare, savor, and share traditional meals.

As an environmental scientist and consultant immersed in Mexico’s heritage, my work on the Casa Jacaranda Garden in Cuernavaca earned me a scholarship to the MAD Academy (founded by René Redzepi of Noma in Copenhagen) in recognition of my dedication to preserving Mexico's traditional foodways. My approach is deeply rooted in history, gastronomy, culture, and sustainability—a continuous journey of research and learning that I try to embrace every day.
